BROCCOLI TATER TOTS

Kids love tater tots! Heck…who am I kidding, I LOVE TATER TOTS! These homemade broccoli tater tots are easy to make and freezer-friendly. Make an extra batch to freeze for an easy dinner or lunch side dish.
I like to save myself a little time and buy pre-chopped broccoli florets in the produce department for this recipe, but a regular head of broccoli chopped up works well too.
INGREDIENTS
3 cups steamed Broccoli
1 tsp Garlic powder
1/4 cup vegan or regular Parmesan cheese
3/4 cup vegan Shreds or regular shredded cheddar cheese
1 Egg or 1 vegan egg
DIRECTIONS
Preheat oven to 450 degrees. Line baking sheet pan with foil, and spray with cooking spray
Place broccoli in a microwaveable and cover or keep in the bag and poke holes and cook on high for 4 min.
Remove broccoli from microwave and carefully remove saran wrap from bowl, (careful, there will be hot steam). Add the rest of the ingredients to the bowl, breaking up the broccoli florets as you stir.
With your hands, form broccoli mixture into small tots (or patties) and lay on prepared baking sheet. Bake for 20-25 minutes, or until they are lightly golden brown on top.
