CHOCOLATE BLACKBERRY MUFFINS

I was having a huge sweet tooth so I took a look around my house and all I had was blackberries and chocolate so why not make some muffins!! OMG, they are the perfect combo to satisfy any sweet-a-holic!
INGREDIENTS
1 cup Protein flour
1 teaspoon baking powder
1/8 teaspoon salt
2.5 tablespoons olive oil
1/3 cup sugar
1/3 cup milk
1 egg
1/2 teaspoon vanilla essence
3/4 cup blackberries
1/3 cup lilly’s no sugar added chocolate chips
DIRECTIONS
CHOCOLATE BLACKBERRY MUFFINS - AIR FRYER METHOD
1. Place a paper muffin liner inside each cup of a muffin tray.
2. In a large bowl, mix the flour, baking powder and salt.
3. In a separate bowl whisk together the oil, milk, egg, vanilla and sugar until well combined.
4. Add the wet ingredients into the dry and mix until just combined, then gently fold in the blackberries and chocolate chips so they don't break.
5. Divide the muffin batter into the muffin cups, top with vanilla sugar.
6. Place in the air fryer basket and bake for 12 -15 mins or until a skewer inserted into a muffin comes out clean.
7. Allow the muffins to cool slightly in the baking tin before transferring them a rack to cool completely.
CHOCOLATE BLACKBERRY MUFFINS - OVEN METHOD
1. Preheat the oven to 375F

5. Add the wet ingredients into the dry and mix until just combined, then gently fold in the blackberries and chocolate chips so they don't break.

7. Allow the muffins to cool slightly in the baking tin before transferring them a rack to cool completely.
