CHOPPED CHICKEN BEET AVOCADO SALAD
I absolutely love the sweetness of beets mixed with fresh avocado, feta and some chopped up chicken! Throw in a little pepita’s and YUM!
INGREDIENTS
4 oz. raw boneless skinless chicken breast
Dash garlic powder
Dash onion powder
Dash each salt and black pepper
3 cups roughly chopped red leaf lettuce
1/3 cup chopped cooked beets (previously canned/packaged and drained)
2 tbsp. crumbled reduced-fat feta cheese
1/4 oz. (about 2 tbsp.) pepita seed
2 oz avocado
½ cup Bolthouse balsamic vinaigrette
DIRECTIONS
Air fry or oven bake at 375.
Place chicken in the oven and bake for 25 min
Meanwhile, place lettuce in a large bowl, add all the ingredients and then chop up the chicken and place it on top.
Dig in!
