COCONUT JOY COOKIES

OMG….the ooeist gooiest cookies yet!!! A little hint of coconut with lots of chocolate but it Is egg free and dairy free!
INGREDIENTS
1 1/2 cups mashed extra-ripe bananas
1 1/2 cups gluten free old-fashioned oats
1/2 tsp. coconut extract
1 Lilly’s white chocolate chip or chocolate bar (finely chopped)
1 tbsp. unsweetened shredded coconut
DIRECTIONS
Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.
In a medium-large bowl, combine bananas, gluten free oats, coconut extract. Mix well.
Fold in half of the chocolate. Form into 18 circles on the baking sheet each about 2 inches wide.
Sprinkle with coconut and remaining chocolate, and lightly press to adhere.
Bake 14 - 16 minutes.
Dig in!
