GRILLED CHICKEN CAPRESE

This recipe is such a summertime treat! It’s great for grilling but so light and refreshing!
Ingredients
1 1/2 pds chicken breast
5 oz low fat mozzarella cheese, sliced into 4 slices
1 roma tomato, sliced into 4 slices
1 tsp garlic powder
1/2 tsp onion powder
1 tsp Italian Seasoning
2 tbsp Balsamic glaze
1 tbsp fresh basil
DIRECTIONS
Preheat your grill
Season your chicken breast with the seasonings
Place chicken on the grill and cook all the way through.
Place the mozzarella on top of the chicken breast and cook until melted
Take the chicken off the grill, then add the tomato, balsamic glaze and basil
Serve with a salad, side of rice or pasta
Dig in!
