MEDITERRANEAN CHICKPEA SALAD

This dish can actually be made vegan as well using vegan feta! It’s so light, crunch and delish!
INGREDIENTS
For the dressing:
1/4 cup extra virgin olive oil
3 tbsp red wine vinegar
1-2 tbsp minced garlic
1 tsp dried oregano
1/2 tsp sea salt
1/4 tsp ground pepper
For the salad:
1 large cucumber halved lengthways, seeded and sliced
12 oz cherry tomatoes halved
1 green bell pepper deseeded and diced
½ red onion thinly sliced
14 oz chickpeas one can, rinsed and drained
1 can Kalamata olives
1 cup of parsley finely chopped
3 oz feta cheese crumbled
DIRECTIONS
In a small jar add all dressing ingredients and shake vigorously to mix thoroughly.
Prep all the veggies and add them to a large salad bowl together with the chickpeas and feta cheese.
Top with the dressing and toss to combine.
Dig in!
