PUMPKIN PIE FRENCH TOAST STICKS

Who doesn’t love french toast and pumpkin all rolled up into one! Then make them into french toast sticks and any kid will also love them!
Super healthy and what a way to start your morning with a donut and coffee!
INGREDIENTS
2 large egg whites
2 tbsp. unsweetened almond milk
2 tbsp. canned pumpkin
1 tbsp truvia
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1/2 tsp. pumpkin pie spice
¼ tsp salt
2 slices Sara Lee low calorie bread
DIRECTIONS
In a medium bowl, combine all ingredients except bread. Whisk with a fork until uniform.
Cut bread into 1-inch-wide strips. Coat with egg mixture.
Bring a large skillet sprayed with pam spray to medium-high heat.
Cook about 2-3 min per side, should be golden brown!
Optional toppings: sugar-free pancake syrup, pb 2, truvia confectioners sugar. Dig in!
