SUMMER CHICKEN SALAD
Summers in Vegas can be brutal, which is why this Summer Salad is the best to have to keep you nice and cool and refreshed!
INGREDIENTS
8 cups spinach
1 medium orange pepper
10 cherry tomatos
1 small fuji apple
10 oz. cooked and chopped skinless lean chicken breast
1/2 cup blueberries
1/4 cup Bolthouse balsamic vinaigrette
DIRECTIONS
Evenly distribute lettuce between two large plates or bowls.
Chop the pepper and the apple, discarding the pit and the core. Evenly distribute the chopped fruit between the plates or bowls.
Top each salad with 5 oz. chicken and 1/4 cup blueberries. Drizzle 2 tbsp. dressing over each salad, or serve it on the side.
