SUNFLOWER BANANA MUFFIN

I love making treats with sunflower butter! I find so many people are allergic to either almonds or peanuts but rarely sunflower butter! So low and behold we have a tasty treat for those with nut allergies!
INGREDIENTS
2 cups gluten free flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
3 medium bananas
1/3 cup honey
1/4 cup coconut oil, melted
1 vegan egg
1 tsp pure vanilla extract
1/2 cup Creamy Sunflower Butter
1/3 cup flax milk
¼ cup walnuts
DIRECTIONS
Preheat the oven to 350 F. Grease a muffin tin pan.
With a mixer, combine all of the liquids: honey, coconut oil, vegan egg, vanilla, Sunflower Butter and flax milk. Next, add in the bananas and mix until you reach the desired texture.
With mixer on low, slowly add in the baking powder, baking soda, salt, cinnamon and then flour. Don’t overmix, batter may be lumpy.
Place into the muffin tins, about 3/4 the way full.
Bake for 15-18 minutes.
Let them cool and enjoy with a cup of hot tea or coffee!
