TOFU SCRAMBLE

Tofu scramble is a popular quick and easy, scrambled egg substitute for vegetarians and vegans. Most vegetarian restaurants serve up some version of this dish for breakfast or brunch, but it's simple and easy enough to make at home with little more than tofu, a few veggies, and some seasonings.
Put it with a side of toast and vegan butter or homemade preserves and you have a tasty, hearty breakfast!
INGREDIENTS
• 8 oz Extra-firm tofu
• ¼ Onion
• ½ Red bell pepper
• 1 cup Kale, chopped
• ½ tsp Garlic powder
• ½ tsp Cumin
• ½ tsp Salt
• ¼ tsp Turmeric
• ¼ tsp Ground black pepper
Optional:
2 slices Dave’s Killer Bread
DIRECTIONS
1. Wrap tofu block with paper towels and place a heavy cutting board on top. Allow tofu to drain for at least 15 mins.
2. Heat a few tablespoons of water or oil over medium-heat in a large skillet. Once hot, add sliced bell pepper and onion to the pan cooking until softened.
3. Add kale and cover to steam for about 2 mins.
4. Crumble tofu block into pan. Add cumin, turmeric, garlic powder, and salt and pepper to taste. Cook for 5-10 mins until tofu just starts to brown.
5. Serve alongside toast, breakfast potatoes, or just as is!
