AIR FRYER BUTTERNUT SQUASH
French fries are one of those foods that everyone can agree on, no matter how picky an eater they are. But butternut squash fries take it to a whole other level! Most people get their fries at restaurants or in the frozen section at the grocery store, but the best way to enjoy them, as well as create a healthier version is to prepare them yourself at home. All you need is an air fryer and enough butternut squash to satisfy your hunger. Be sure to make enough to share, ‘cause these fries are guaranteed to go fast!
INGREDIENTS
One 2-lb. butternut squash (about 20 oz. once peeled and sliced)
1/8 tsp.salt
Optional dip: no sugar added ketchup
DIRECTIONS
Peel squash and slice off the ends. Cut in half widthwise, just above the round section. Cut the round piece in half lengthwise and scoop out the seeds.
Cut squash into French-fry-shaped spears. Thoroughly pat dry.
Set air fryer to 392 degrees. Cook in two batches, about 12 minutes each, shaking the basket halfway through.
Oven method:
Preheat oven to 425 degrees. Spray 2 baking sheets with nonstick spray.
Lay spears on the sheets and sprinkle with salt. Bake for 20 minutes.
Flip spears and bake until mostly tender on the inside and crispy on the outside, about 15 minutes.
