AIR FRYER APPLE FRITTER BITES
Prep Time: 10 min
Cook Time: 6 min
When I say that I had to have apple fritters when I was pregnant with my son, I am not kidding. I must have had at least 3 a week! Sure wish I would have had this recipe back then! So good and not too shabby on macros!
INGREDIENTS
· 2 apples, cored and diced
· 1 cup protein flour
· 2 tablespoons truvia
· 1 teaspoon baking powder
· 1/2 teaspoon salt
· 1/2 teaspoon ground cinnamon
· 1/4 teaspoon ground nutmeg
· 1/3 cup almond milk
· 2 tablespoons butter, melted
· 1 egg
· 1/2 teaspoon lemon juice
CINNAMON GLAZE
· 1/2 cup truvia or swerve confectioners sugar
· 2 tablespoons almond milk
· 1/2 teaspoon ground cinnamon
· Pinch of salt
DIRECTIONS
Dice the apples into small cubes and set aside. I peeled mine but can keep the peel on.
Add the flour, sugar, baking powder, salt, ground cinnamon, and ground nutmeg into a large mixing bowl and stir to combine.
In a separate bowl, mix the milk, butter,* egg, and lemon juice.
Add the wet ingredients into the dry ingredients and stir just until combined. Stir in the apples and put mixture into the fridge for anywhere from 5 minutes to 2 days (covered).
Preheat your air fryer to 370 degrees.
Put a piece or parchment paper on the bottom of the basket and place 2 tbsp size balls of the apple fritter dough. Place apple fritters in the air fryer and cook for 7 minutes.
While cooking, mix the confectioners sugar, milk, cinnamon, and salt together to make the glaze.
Remove the apple fritters from the air fryer, place them on a wire rack, and immediately pour the glaze over top and dig in!
