TOMATO CUCUMBER CORN AND AVOCADO SALAD
This salad is great as is, or heck, why not throw a little protein in the mix, like some bay shrimp or chopped up chicken!
INGREDIENTS
1 lb. ripe tomatoes, chopped
1 English cucumber, chopped
2 ears corn, cut off the cob or canned
1 avocado, chopped
1/4 cup basil, chopped
1 tbsp. olive oil
1.5tbsp lemon juice
1 Salt and pepper
DIRECTIONS
Gently toss everything together.
Season well with salt and pepper.
