AIR FRYER SHRIMP FAJITAS
Prep Time: 10 min
Cook Time: 20 min
I love fajita’s but even more so when the fajita mix is homemade! You can make the seasoning from scratch or use a store bought one but I do have the ingredients for a bomb mix below!
Ingredients
· 1 red bell pepper, sliced into thin strips
· 1 green bell pepper, sliced into thin strips
· 1 red or white onion, sliced into thin strips
· 1 pound uncooked medium shrimp, peeled and deveined
· 3 tablespoons olive oil, divided
· 4 flour or corn tortillas, toasted
· Homemade fajita seasoning 2-3 tbsp (or packaged fajita seasoning)
· 1 tablespoon cornstarch
· 2 teaspoons chili powder
· 1 teaspoon salt
· 1 teaspoon paprika
· 1 teaspoon white sugar
· ½ teaspoon onion powder
· ½ teaspoon garlic powder
· ¼ teaspoon cayenne pepper
· ½ teaspoon ground cumin
DIRECTIONS
Preheat the air fryer to 400 degrees F (200 degrees C).
Place bell peppers and onion in a large bowl. Place shrimp in a separate bowl. Sprinkle 2 teaspoons of the fajita seasoning over the shrimp. Sprinkle the rest of the seasoning over the vegetables. Drizzle 2 tablespoons olive oil over the vegetables and stir until evenly combined. Add remaining 1 tablespoon olive oil to the shrimp and stir until combined.
Place vegetables in the basket of the preheated air fryer and cook for 12 minutes, shaking halfway through cook time. Transfer mixture to a large bowl.
Place shrimp in the basket of the air fryer and cook for 5 minutes. Flip and cook for 3 minutes more. Divide vegetables among tortillas and top with shrimp. Dig in!
