These pancakes are a wonderful substitute for regular pancakes if you are or aren’t watching your carbs! They are very filling and are on the dense side. This is a basic recipe that can be tweaked to be healthy or decadent.

INGREDIENTS
2 tbsp. coconut flour OR 2 tbsp. oat flour
2 large egg whites
1/4 tsp. coconut extract
2-3 drops almond extract
3 tbsp. almond milk (or milk of choice) 1/2 tsp. baking powder
3-5 pkts stevia (or 1/2-1 tbsp. sweetener of choice)
optional: 1 tbsp. mini chocolate chips
note: To make oat flour, put some oats in blender, pulse until flour consistency. use gluten free oats if gluten sensitive.
DIRECTIONS
In medium bowl, place all ingredients and combine with whisk until smooth. spray a non-stick skillet or griddle with non-stick cooking spray then heat over medium heat.
Spoon batter on to skillet or griddle (can do 2 large pancakes or 4 small). if adding chocolate chips, sprinkle over pancake before turning.
Flip pancake when top is covered with bubbles and edges appear dry.
After about 30-60 seconds, remove from heat and serve immediately.
Note: coconut flour pancakes will puff up; pat them down with spatula to make sure they cook through.
