PARMESAN LOW CARB BREAD

Cauliflower bread is a healthy and hearty substitute for flour-based breads and is quite easy to make. One piece of cauliflower bread constitutes one whole serving of vegetables, so even one slice can amp up the nutritional value of your meal! As long as you have a food processor, cauliflower bread is simple make, requiring only a few simple ingredients and taking under an hour to prepare. Whether you are on a gluten-free diet or are simply trying to eat healthier, using cauliflower bread in place of regular bread in sandwiches or burgers is a smart and healthy way to enjoy your favorite foods!


INGREDIENTS

  • 6 Eggs, divided into yolks and whites

  • 1 (6 oz) container
 Plain not fat Greek yogurt (about 3/4 cup) or silk non dairy yogurt

  • 


1/2 cup
 Protein powder

  • 


1/4 tsp
 Garlic powder

  • 1/4 tsp
 Onion powder

  • 1/8-1/4 tsp
 Salt (depending on your taste)

  • 


1/2 tsp
 Baking powder

  • 1/2 tsp
 Baking soda

Topping

  • 1 tsp 
Dried oregano (or herb/spice of choice, such as rosemary)

Optional: 
1-2 tbsp Parmesan cheese


DIRECTIONS

The estimated total time to make this recipe is 40-45 Minutes.

Preheat oven 300 degrees. Spray 9x13 baking pan with cooking spray. Let the eggs and yogurt come to room temperature.

Separate your eggs, putting the egg yolks into a medium size bowl, and the egg whites into a metal mixing stand bowl.

Mix the egg yolks together with the greek yogurt or non dairy yogurt, protein powder, seasonings, and baking powder and baking soda. Set aside.

Beat the egg whites with a kitchen aid stand mixer until firm peaks form (it will resemble whipped cream. I added 1/2 tsp cream of tarter to the egg whites in order to form a more stiff peak).

Fold the egg yolk mixture in with the egg white mixture. (Note: you don’t want to over-mix, just fold everything together gently until combined, or you will break down and deflate the egg whites.

Spread mixture out evenly into pan. Top with dried oregano and parmesan cheese if using. Bake for 40 minutes or until top is golden brown.

**For loaf bread: Spray a large loaf pan with cooking spray. Spread mixture evenly into loaf pan. Bake for 55-60 minutes.
