These bite-sized, gluten-free Peanut Butter Apple Bites are the perfect afterschool snack for the kids or even for your daily snack. Loaded with yumminess and so satiating yet made without refined sugar, they’ll be gone in minutes so be sure to make plenty. You can easily substitute peanut butter (or your favorite nut butter) for almond butter in this recipe.
When you need a mid morning or afternoon pick me up, these protein balls are just the thing. These healthy no bake bites are so easy to make and tasty to snack on.
INGREDIENTS
· ⅓ cup green apple, grated, excess liquid squeezed out
· ⅓ cup almond butter
· ¼ cup maple syrup, or honey
· 1 teaspoon vanilla extract
· 1 ½ cups gluten free rolled oats
· 1 teaspoon cinnamon
· 1 pinch of salt
DIRECTIONS
In a medium bowl, combine the grated apple, almond butter, maple syrup, and vanilla, and stir until smooth.
Add the oats, cinnamon, and salt, and mix until evenly distributed.
Chill in the refrigerator for 30 minutes.
Use a tablespoon to scoop out the mixture, then roll into balls with your hands.
Store in the refrigerator in an airtight container for up to 1 week.
