This grain free pumpkin bread is everything I could have hoped for and more. This gluten free and naturally sweetened pumpkin bread has a perfectly browned crust and a soft, fluffy interior. It is so delicious that my family ate an entire loaf in one day. Guess what? Not one of them guessed that this bread is so healthy being gluten free, grain free, and naturally sweetened! They devoured it without saying a word.

THIS IS THE EASIEST ONE-BOWL, GRAIN FREE PUMPKIN BREAD RECIPE!

Simply add your wet ingredients to a bowl, mix it up until well blended, add your dry ingredients, mix well and you’re off to baking. No fancy mixers required.


INGREDIENTS

·       3/4 cup Coconut flour

·       1/2 cup APN Protein powder

·       3/4 cup Truvia Sweetener

·       1 tsp Cinnamon

·       1/2 tsp Salt

·       1 tsp Baking soda

·       1 tsp  Baking powder

·       1 (15 oz) can Pumpkin 

·       1 1/4 cup Egg whites or 5 full egg whites

·       1/4 cup sugar free Maple syrup

·       1/4 cup Almond milk


DIRECTIONS

Preheat the oven to 350 degrees and spray a loaf pan with cooking spray. 

In a large bowl, mix together the dry ingredients. Then add the wet ingredients and stir to combine. 

Pour the batter into the loaf pan and bake until a toothpick comes out clean, 60-75 minutes. Cool completely before slicing and serving.
