AVOCADO PESTO SAUCE W/ZOODLES

Such a creamy, rich, delicious way to eat a “mock” pasta! The fat in the avocado gives you all the feel goods and fullness of a true pasta dish yet made with a low carb option such as zucchini noodles….aka “zoodles”


INGREDIENTS

·       3 Avocado

·       1/2 cup Basil

·       2 tsp Minced garlic

·       2 tbsp Lemon juice

·       1 tbsp Water

·       1/4 cup Parmesan cheese or vegan parmesan

·       1/2 tsp Salt

·       4 Zucchini

DIRECTIONS

Prepare zucchini noodles. With zucchini noodles, simply spiralize them, and warm them in the microwave for 60 seconds, or until warmed through if desired.

Place everything for the pesto in a blender or food processor and blend until smooth, and toss zucchini noodles with pesto. Serve warm or cold.
