This pesto is great for any dish! It’s great with pasta, zoodles, veggies or even as a spread on some garlic bread.
INGREDIENTS
2 cups packed fresh mint leaves
1/4 cup grated Parmesan cheese
1 tablespoon chopped pistachios
1 tablespoon lime juice
2 tablespoons olive oil
DIRECTIONS
Combine packed fresh mint leaves, grated Parmesan cheese, chopped pistachios, and lime juice in a food processor. With processor running, drizzle in canola oil; process until smooth.
