BACON RANCH CHEDDAR MUFFINS

What sounds better than bacon, ranch seasoning and cheddar cheese all rolled into one? Make it as muffins for meal prepping or a meatloaf for the whole family to enjoy . A simple and fool-proof recipe by adding all the ingredients in one bowl. A tasty, healthy way to get in your protein while maintaining that waist line with low carb and low fat.
INGREDIENTS
· 1 lb ground chicken breast
· 5 slices low sodium turkey bacon
· 2 egg whites
· 1 packet ranch seasoning
· 1/4 cup Old fashioned oats
· 1 tsp garlic powder
· 1 tsp onion powder
· 1/8 tsp Salt
· Pinch Pepper
· 1/2 cup Grated parmesan cheese
· ½ cup low fat shredded cheddar cheese
DIRECTIONS
Preheat the oven to 350 degrees. Spray 12 muffin tins with cooking spray. Set aside. (I use silicone or foil muffin liners, which I find work great, because they never stick! Or you could use a loaf pan if you prefer to make this recipe into a meatloaf.)
In a large bowl, combine everything except for the additional cheese. Divide mixture among muffin tins (about 1/4 cup per muffin tin), or put in a loaf pan.
Top each muffin with a sprinkle of additional cheese
Place the muffin tin in the pre-heated oven for 35-40 minutes (or 45-55 minutes for loaf pan).
Topping:
1/4 cup low fat shredded cheddar cheese
