BLACK BEAN LIME BURGERS

INGREDIENTS
*2 cups canned low sodium black beans, drained
*1 cup canned nonfat refried beans
*1/3 cup canned corn, drained
*1/2 cup red pepper, chopped
*1/4 cup red onion, chopped
*1/3 cup egg whites (OR flax egg)
*1/4 cup flour
*1 tsp. cumin
*1/2 tsp. chili powder
*1/3 cup gluten free oats
*2 tbsp. chopped cilantro
*2 garlic cloves, minced
*2 tsp. lime juice
*1 tsp. lime zest
*Salt and pepper
DIRECTIONS
Add the black beans to the bowl. Make sure they are well drained and dry otherwise the burgers won't hold together as well. Mash a bit with a fork. Then mix in all the remaining ingredients with a spoon until well combined and thick. If the batter seems to thin, add a touch more flour.
Form into patties.
Cook in a skillet sprayed with cooking spray for 3-4 minutes per side or bake for 25 minutes at 375 degrees, flipping halfway through.
