This Bread is not only a great treat for breakfast, but the Blueberry Protein bread is great anytime of the day, especially post workout with the added extra protein its loaded with!

It’s got great flavors of blueberry and vanilla blended together to make it a delicious treat!  Best part…..it’s healthy!!


INGREDIENTS

  • 1 1/2 cup Oat flour

  • 1/2 cup APN Vanilla protein powder

  • 1 1/2 tsp Baking powder

  • 1 tsp Baking soda

  • 1/2 tsp Salt

  • 3/4 cup truvia

  • 2 large Eggs

  • 1/2 cup unsweetened or no sugar added applesauce

  • 1/2 cup Plain low fat Greek yogurt (or additional applesauce or silk non dairy yogurt)

  • 1 tsp Vanilla extract

  • 1 cup Fresh blueberries


DIRECTIONS

Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. (If you are starting with whole oats, instead of oat flour, ground the oatmeal in a blender or food processor until it turns into a flour.) 

Mix all of the ingredients (except for the blueberries) together in a large bowl. Gently fold the blueberries into the mixture. Pour mixture into prepared bread pan and bake for 35-40 minutes, or until a toothpick comes out clean.
