INGREDIENTS
4 (4 oz) Salmon fillets, skin on or off
Thai Chili Sauce
1/2 cup Low sugar maple syrup
1/4 cup Water
2 tbsp White or rice vinegar
1 tbsp Cornstarch or arrowroot powder
1 tbsp Garlic, minced
1 tsp Salt
1/2 tsp Red chili flakes (or to taste)
Optional: 2 – 3 tbsp green onions, chopped
DIRECTIONS
To Make the Sauce: In a small saucepan, whisk all ingredients until combined. Bring to a boil, reduce heat to low and simmer for 5-10 minutes or until thickened.
Spray a large baking dish (or rimmed baking pan) with cooking spray, or line with parchment paper for easy clean up. Lay salmon fillets in the prepared baking dish. Pour half of the sauce over Salmon fillets, brushing to evenly coat with chili sauce.
To cook the fish, turn on oven’s broiler (on high heat). Broil for 8 minutes, rotating baking pan once. Remove from the oven and brush the top of each fillet with remaining Thai chili sauce. Return to the oven and broil for another 5 minutes or until salmon has caramelized. Serve hot garnished with green onions with brown rice or quinoa as a side if desired.
