BUFFALO CHICKEN MEATBALLS

These meatballs pack a little punch and are great as an appetizer or even for dinner on top of zoodles rice!


Ingredients

1 lb ground chicken breast

1 Egg

1/4 cup Almond flour

1/4 cup Feta cheese

1/4 cup Greek yogurt or silk non dairy yogurt

1/4 cup Celery

1/4 cup Carrots 

3/4 cup Franks Red Hot buffalo sauce


DIRECTIONS

Preheat oven to 425 degrees. Line a large baking pan with foil and spray with cooking spray. In a medium bowl, mix everything together along with 1 tbs of the buffalo sauce until well combined. Roll into 12 balls and place on baking pan. 

Bake in preheated oven for 15 minutes, then remove pan from oven and toss meatballs in the rest of the buffalo sauce on the pan. Place meatballs back in the oven and bake an additional 10 minutes, or until meatballs are cooked through, (reach a minimum temperature of 165 degrees). Garnish with additional cheese and serve with carrot and celery sticks if desired.
