Picture a lazy, chilly Sunday morning with a cup of coffee and a homemade, HEALTHY,  warm scone.  Made with oat flour, cinnamon, syrup and any apple.  The lightly golden-crusted scone is topped with a drizzle of gooey, warm caramel sauce.

 

I don’t know about you, but I would wish everyday was Sunday!


INGREDIENTS

SCONE DOUGH

·       1 cup gluten free oat flour

·       2 tsp Baking powder

·       1/4 cup Truvia

·       1/4 tsp Salt

·       3 tbsp Unsweetened applesauce

APPLE FILLING

·       1 cup Diced apples (I like Fuji)

·       1 tbsp sugar free maple syrup

·       1 tsp Cinnamon

CARAMEL SAUCE

·       1 cup flax or almond milk

·       1 cup Low sugar maple syrup

·       1 tsp Vanilla extract

·       1/2 tsp Cornstarch or arrowroot powder dissolved in 1 tbsp cold water


DIRECTIONS

Dough for the Scones: Preheat oven to 375 degrees. Line a baking sheet pan with foil and spray with cooking spray. Combine all of the ingredients for the dough in a medium size bowl. Lightly mix.

 

Apples for the Scones: In a small, microwaveable safe bowl, combine the ingredients for the apples. Stir to coat the apples in the syrup/cinnamon mixture. Microwave for 45-60 seconds, or until the apples just start to become tender.

 

Bake Scones: Next, combine the apple mixture to the scone dough, and stir until just combined, and dough forms into a ball. Place dough on prepared baking sheet and pat into a circle that is about 1/2-inch thick. Use a sharp knife to cut into 4 even triangles, but don't separate them yet. Bake until lightly golden, or until firm to the touch, about 12-15 minutes. Cool for 5 minutes and drizzle caramel over the top.

 

Making the Caramel Sauce: In a small saucepan, combine all of the ingredients (except for the cornstarch), and stir to combine. Bring mixture to a boil over high heat, then bring back down to a simmer over medium heat. Stir occasionally, and once it starts to turn darker in color and gets slightly thicker, add the cornstarch (dissolved in water first) to the sauce pan and stir. Continue to cook for about 20-30 seconds, and turn off the heat. Caramel should be thick. Drizzle over scones right away!
