CHICKEN ZUCCHINI MEATBALLS W/ZOODLES

When are you NOT in the mood for Chinese? With this easy dish, you could have it every night of the week!


Ingredients

  • 8 oz. (about 1 medium) zucchini

  • 1 lb. ground chicken breast

  • 1/3 cup panko breadcrumbs

  • 2 large egg whites

  • 2 tbsp. fat free cream cheese

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • 1/2 tsp. each salt and black pepper


DIRECTIONS

Preheat air fryer to 400 degrees. Line with aluminum foil

Shred zucchini, and place in a strainer to drain, press out as much moisture as possible.

Put zucchini in a large bowl, and add remaining ingredients and seasonings. Mix thoroughly.

Form into 16 meatballs, and place in the air fryer.

Air fry for 10-12 minutes. Flip meatballs halfway through.

Dig in!
