CILANTRO LIME SALMON
Prep Time: 10 min
Cook Time: 25 min
I believe easy salmon recipes make the best meals. Simple, fast, and healthy they are always just what we are looking for. This cilantro lime version is no exception with an easy sauce made in the same pan you cook the salmon in. You won't be able to get enough.
It’s packed with flavor blending of sweet with and sour, making it a tasty treat!
What I also love about this dish is it’s so versatile. You can dress it up with a carb such as pasta, rice or rosemary potato’s or you can low carb it with some zucchini zoodles, cauliflower rice or stir fried veggies! It’s great for any dietary need!
INGREDIENTS
1 lb Salmon fillets, skin removed
1/2 tsp Salt
1/4 tsp Pepper (optional)
3 Medium limes
1/4 cup Honey or low sugar maple syrup
1 tbsp Garlic, minced
1/2 cup chopped Cilantro
DIRECTIONS
Preheat oven to 375 degrees. Line a large baking sheet pan with foil and spray with cooking spray. Lay salmon on pan and season with salt and pepper on both sides to taste.
Juice 2 of the limes and slice the third into circles. In a small bowl, stir together lime juice, honey, and garlic. Pour mixture over salmon, and place lime slices on top. Cover the salmon with foil and bake for 15-20 minutes, or until fish is just done cooking through.
Uncover salmon and turn on the ovens broiler. Broil salmon for 5 minutes. Sprinkle chopped cilantro, and juice a fresh lime over the top, and enjoy.
