This bread is so healthy yet delicious it’s almost sinful! Unbelievably simple to make, just mix and pop in the oven and you have yourself some warm, sweet bread that you can put butter, peanut butter or jelly on or just have it plain with a cup of hot coffee!

Slice it up and enjoy!

 


INGREDIENTS

Bread:

·       1 cup Oat flour (or 1 1/4 cup old fashioned oats)

·       1/2 cup APN Iso Pro Vanilla or plain protein powder (or additional oats)

·       1 1/2 tsp Baking powder

·       1/2 tsp Baking soda

·       1/2 tsp Salt

·       3/4 cup Truvia

·       2 Egg whites

·       1/2 cup Unsweetened almond milk

·       1/3 cup Unsweetened applesauce

·       1/4 cup Plain low fat Greek yogurt (or additional applesauce)

·       1/2 tsp Vanilla extract

Cinnamon Swirl:

·       2 tsp Cinnamon

·       1/8 cup Truvia

Optional Protein Glaze:

·       1/2 cup APN Iso Pro Vanilla protein powder

·       2-4 tbsp Almond milk or flax milk


DIRECTIONS

Preheat oven to 350 degrees. Spray a loaf pan with cooking spray. Mix the dry ingredients together in a medium bowl, and then add the wet. Stir until well combined. Pour into sprayed bread pan.

In a small bowl, mix together the cinnamon and sweetener. Pour on top of bread and swirl throughout bread using a knife or toothpick. Bake 40-45 minutes, or until toothpick comes out clean.

To make the optional glaze, mix ingredients for glaze and pour over each piece just before serving! You can store leftovers in fridge.
