CROCKPOT LEMON ROTISSERIE CHICKEN

This delicious Crockpot Lemon Chicken is so hearty and delicious and no one will believe how easy this dinner is. This entire meal is so filling and delicious but light enough to enjoy anytime of the year. I love meals like this!
The fresh lemon and half and half combine with all of the seasonings for a really amazing sauce. Yum!

Add an easy vegetable side dish and dinner is all ready to enjoy. I love delicious roasted green beans with the lemon chicken. They only take a minute to prepare and they are so yummy.
INGREDIENTS
1 head Garlic (or about 10-15 cloves)
2 Lemons (sliced)
1 tsp Salt
1/2 tsp Pepper
1 tsp Thyme (or 1 tsp dried oregano)
1 Large whole chicken (about 3-4 pounds)
Fresh parsley, rosemary, or any fresh herbs of choice (optional)
DIRECTIONS
Combine all of the spices in a small bowl and set aside.
Cut the head off the garlic head and lay this and the lemon wedges from the lemons in bottom of crockpot.
Clean out the insides of the chicken, rinse chicken and pat dry. Season chicken, inside and out, with the seasoning mixture.
Lay chicken on top of garlic and lemon slices.
Cover crockpot and cook on high for about 4 hours or on low for 8 hours
When chicken has finished cooking, turn off crockpot off and let chicken rest for about 15 minutes.
Remove from crockpot, slice it up and enjoy!
