FISH CAKES

I don’t know about you but I LOVE crab cakes but crab isn’t always in season readily available so the next best thing, FISH CAKES!
These cakes are so simple to make and are literally to die for! And the kicker, they are HEALTHY!

INGREDIENTS
1 (12 oz) can Albacore white tuna in water, drained very well
1 Large egg
1/2 cup Almond meal/flour (or oat flour)
3 tbsp grated Parmesan cheese
1/4 tsp Garlic powder
1/2 tsp Dried parsley (or a few tablespoons of finely chopped fresh parsley)
1 tbs p Dijon mustard
1 tbsp Fresh lemon juice
Pinch Salt and pepper (to taste)
2 tbsp Chopped fresh chives
DIRECTIONS
Combine all of the ingredients for the fish cakes in a medium bowl, stirring until combined. Form into 4 patties.
Heat a large non-stick skillet over medium-low heat, and spray with cooking spray. Cook each patty on each side for about 5 minutes, or until cooked through, and slightly golden brown on the outside. (You could also bake them in a 425 degree oven for a total of 15 minutes, flipping them half way through cooking if you prefer)
