GROUND TURKEY LETTUCE CUPS

Move over PF Changs…..These ground turkey lettuce cups are the BOMB! So light and low in fat, yet so satisfying!
Ingredients
1 lb. raw extra-lean ground ground turkey (99/1)
1/2 cup chopped onion
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/8 tsp. each salt and black pepper
1/2 cup canned crushed pineapple packed in juice, lightly drained
1/3 cup light sugar teriyaki marinade or sauce
1/4 cup canned water chestnuts, drained and chopped
12 butter lettuce leaves
1/2 cup chopped scallions
½ cup red cabbage
½ cup shredded carrots
DIRECTIONS
Bring a large skillet sprayed with Pam spray to medium-high heat. Add ground turkey onion, and seasonings. Cook, stir, and crumble until beef is fully cooked and onion has softened, 5 - 7 minutes.
Reduce heat to low. Add pineapple, teriyaki, and water chestnuts. Cook and stir about 2 minutes.
Fill each lettuce cup about 1/4 cup each. Top with scallions.
Dig in!
