LOW CARB COFFEE CAKE

LIKE OMG!! This coffee cake has got to be one of the most delicious coffee cakes…..EVVVVVAAAAAHHH!
You will find yourself making this quite often as its got just the right amount of sweetness, with hints of vanilla and cinnamon! But the cream cheese frosting glaze….takes the prize! It’s optional but not for me!
If you make this on a weekend its sure to be gone once the family wakes up!
INGREDIENTS
Coffee Cake:
· 2 cups Almond flour
· 1 cups Truvia
· 1/2 cups unsweetened Applesauce
· 4 Eggs
· 2 tsp Baking powder
· 2 tsp Cinnamon
· 1 tsp Almond extract
Optional Glaze:
· 1 batch Glaze
Cream Cheese Glaze:
· 1/2 cup low fat Cream cheese
· 1/8 cup Truvia
· 1/4 cup Almond milk
· 1/2 tsp Vanilla extract
DIRECTIONS
Preheat oven to 350 degrees. Spray an 8x8 baking dish with cooking spray.
In a small bowl, add almond flour, sweetener and applesauce. Mix together until it becomes crumbly. Set aside 1/2 cup of mixture for the topping.
In a large bowl, add the remaining almond flour mixture, eggs, baking powder, cinnamon, and almond extract. Stir to combine.
Pour mixture into baking dish and spread evenly with a spatula. Sprinkle saved batter for topping over the top, evenly distributing as a crumble mixture over the top of the batter. Bake for 30 minutes or until center is done
