Mediterranean Turkey burgers are just what you need to spice up a bad day or to make things a little more interesting at dinner. It’s time to step away from the frozen pizzas and chicken nuggets and dig into something more interesting, and healthier. Make these delicious Burgers and watch your family devour them. They will actually ask you to make them often. At least my kids do!


Ingredients

  •       1.25 lb Lean ground turkey

  •       1/2 cup (8oz) Chopped spinach

  •       1/3 cup Crumbled feta

  •       1/4 cup Finely chopped red onion

  •       1/4 cup Chopped fresh parsley (or 1 tbsp dried)

  •       1/3 cup Sun dried tomatoes, chopped

  •       1/2 tsp Salt

  •       1/2 tsp Pepper

  •       1/2 tsp Garlic powder

  •       1 tsp Dried oregano


DIRECTIONS

In a medium microwave safe bowl, thaw frozen chopped spinach by covering the bowl with plastic wrap and microwaving for 1-2 minutes. Squeeze spinach in a kitchen towel or in paper towels to drain excess water. (Note: If you are using zucchini, simply grate the zucchini.) Place spinach (or zucchini) in a large bowl.

Add to the bowl: Ground turkey, feta, red peppers, onion, and seasonings. Mix ingredients with spoon or hands, distributing all of the ingredients thoroughly.

Divide meat mixture into four patties. Meanwhile, heat a pan, or outdoor grill over medium-high and spray pans with cooking spray if cooking indoors. Brown the burgers on the first side about 3-4 minutes. Flip over and finish cooking on the second side, about 3-4 additional minutes, or until cooked through and no longer pink in the center. Enjoy on a lettuce wrap or whole grain bun, and top with hummus, tomatoes, red onion, and additional feta if desired!
