SHRIMP SCAMPI ZOODLE PASTA

This Shrimp Scampi with Zoodles recipe will give you the satisfaction of knowing you’re eating a healthy meal, but without totally giving up on the indulgent flavors. It’s easily adjustable to suit just yourself or a whole family, by using the zoodles or adding pasta for the rest of the fam!
Ingredients
For the Zoodles:
3 Medium zucchini (or 1 very large)
For the Shrimp:
1 tsp Garlic, chopped
1 tbsp Lemon juice
6 oz Peeled and deveined medium shrimp
For the Scampi Sauce:
1/2 cup low fat or fat free cream cheese
1/2 cup flax or almond milk
1 tsp Garlic, chopped
1 tsp Dried onion, minced
1/4 cup Chopped fresh parsley or 2 tbsp dried parsley
Zest Half of one lemon
Pinch Salt and pepper (or to taste)
1/4 cup grated Parmesan cheese
DIRECTIONS
To make the zucchini use a spiralizer or thick side of a grater.
To cook the shrimp, spray a large skillet with cooking spray, and heat over medium-high heat. Cook the shrimp in 1 tsp garlic, the lemon juice, and ¼ teaspoon salt about 4 to 6 minutes. Set shrimp aside.
To make the sauce, remove shrimp from the skillet, and re-spray with cooking spray. Combine all of the ingredients for the sauce (except for the parmesan cheese), and cook over medium heat, stirring constantly, until the sauce thickens, and remove from heat.
Combine the zucchini pasta with the sauce and parmesan cheese in the skillet. Stir for a few minutes, until zucchini becomes tender. Season with salt and pepper to taste. This should make 2 servings!
