MINI PARMESAN MEATLOAF

When you want a quick meatloaf fix without the long cooking time, this is your perfect solution!
So full of heartiness and flavor, your family will ask for it repeatedly!
These little mini’s are great all year round and will satisfy even the pickiest eater!
INGREDIENTS
· 1.25 lbs lean bison
· 1/2 tbsp Minced garlic (or 1/2 tsp garlic powder)
· 2 tsp Italian seasoning
· 1 (14 oz) can Pizza or pasta sauce of choice (or homemade with tomato sauce/garlic/italian seasoning/parmesan
· 1 Large egg
· 1/2 cup Old fashioned oats (or oat flour, almond flour, or breadcrumbs)
· 1/3 cup Grated parmesan cheese
TOPPING
· 1 cup low fat Mozzarella cheese, shredded
· 1/3 cup Chopped parsley for garnish (optional)
· ½ Medium onion, finely diced
· ½ Medium green or red bell pepper, finely diced
DIRECTIONS
Preheat oven to 425 degrees. Line a baking sheet pan with foil, and spray with cooking spray.
If using onion and bell pepper: Heat your skillet over medium heat and spray with cooking spray. Add the onion and the peppers, saute until tender. Meanwhile, mix together the ground meat, 2/3 cup pizza sauce, egg, oats (or bread crumbs), and parmesan cheese in a medium bowl. Add sautéed vegetables if using.
Divide the meatloaf mixture into four mini loaves. Bake for 30 minutes.
Top each meatloaf with remaining sauce and 1/4 cup mozzarella cheese. bake an additional 5-10 minutes or until they are no longer pink in the center and they reach internal temp of at least 170 degrees. Serve and grub!
