This dish is so versatile! It can be an appetizer, snack or side dish! And it goes great with just about anything! The cheesiness of the parmesan is really what makes it so tasty!


INGREDIENTS

·       1 (12-oz.) package frozen edamame in pods, steamed according to package directions

·       ¼ cup finely grated Parmesan cheese

·       1 tablespoon white truffle oil

·       ¾ teaspoon garlic powder

·       ½ teaspoon kosher salt

·       ½  teaspoon black pepper


DIRECTIONS

Preheat oven to 375°F. Line a large rimmed baking sheet with parchment paper. Stir together all ingredients in a large bowl until fully coated. Spread in an even layer on prepared baking sheet. Bake, stirring once halfway through, until light golden brown, about 15 minutes. Cool 5 minutes before serving.
