SPINACH MEATBALLS

These are at the top of my list of favorite meatballs! The ground turkey keeps the meatball super juicy and then throw in some good ol greens and you have a match made in heaven!

Put them on top of pasta, zoodles or even by themselves they are delish!


Ingredients

  • 1 lb. 93/7 Lean ground turkey

  • 10 oz. frozen chopped spinach

  • 1/2 cup onion, minced

  • 4 garlic cloves, minced

  • 1 egg

  • 1/2 tsp salt

  • 1/2 tsp dried basil

  • 1/4 tsp pepper

  • 1/4 tsp oregano


DIRECTIONS

Preheat the oven to 375 degrees.

Defrost the spinach and squeeze out all the excess moisture using cheesecloth or a paper towel. Make sure to really squeeze out the moisture because too much moisture will cause the meatballs to crumble.

Combine the ground turkey, spinach, onion, garlic, egg, salt, pepper, basil, and oregano with your hands until just mixed.

Roll out the meatballs, 4 per serving (so 16 total for 4 servings), and place on a prepared baking sheet. Bake for 18-20 minutes until cooked through.
