STRAWBERRY CHICKEN SPINACH SALAD
I love this salad, especially during the summer! It is so cool and refreshing with the fruitiness of the strawberries! Make it vegan? Add tofu and vegan feta!
INGREDIENTS
The Salad:
6 cups organic baby Spinach
6 whole Strawberries
1 small Red onion
1 HAAS Avocado
1/2 cup Feta cheese
2 tbsp Sliced almonds
2 chicken breast
Balsamic Dressing:
1/4 cup Balsamic vinegar
1 tbsp Honey
½ tsp Salt
¼ tsp Pepper
DIRECTIONS
Prepare the chicken breast either on a grill or in the air fryer. While the chicken is cooking prepare the salad and the dressing
To prepare the dressing, combine ingredients for dressing in a small shaker bottle or sealed container and shake to combine.
To prepare the salad, slice the strawberries, onion, and avocado. Arrange the spinach, strawberries and red onion in a large bowl. Pour dressing over spinach mixture, and gently toss until everything is evenly coated in the dressing. Divide salad evenly among two plates and top each salad with the avocado, feta, sliced almonds, and chicken if desired. Dig in!
