This Creamy Tuscany Chicken recipe is quick, super easy, and finger-licking good! You are going to love the creamy sauce, the tangy sun-dried tomatoes, and all that spinach served over amazingly juicy chicken breasts. It’s a fancy restaurant-quality meal made right at home.

INGREDIENTS

·       1.25 lb Chicken breasts, sliced or pounded thin

·       1 tbsp Garlic, minced

·       2 cups Unsweetened almond milk or flax milk

·       1 1/2 cup Chicken broth

·       1/4 cup Oat flour

·       3/4 cup Grated parmesan cheese or vegan parmesan cheese

·       2 tsp Italian seasoning

·       1 lb Grape tomatoes, sliced in half

·       2 cups Spinach, packed


DIRECTIONS

The estimated total time to make this recipe is 15-20 Minutes.

Start by heating a large skillet over medium heat and spray with cooking spray. Add chicken breasts to pan and sprinkle each side with a pinch of salt and pepper while cooking. Sauté each side for 2-3 minutes, or until golden brown on the outside. To finish cooking chicken on the inside, add 1/2 cup chicken broth to the pan and let chicken simmer until cooked through for about 3 more minutes. Set cooked chicken breasts aside on a plate. 

To make the sauce: Re-heat skillet over medium heat. Add garlic and sauté for about 1 minute, until fragrant. Add the almond milk and rest of the chicken broth (1 cup). Bring to a gentle simmer, then whisk in oat flour until completely dissolved. Let simmer for an additional 2-3 minutes or until the sauce is thick enough to coat the back of a spoon. Lower the heat and whisk in the Italian seasoning and the Parmesan cheese, little by little until smooth. 

Add the spinach and tomatoes and stir for a for an additional 1-2 minutes, or until the spinach wilts.

Return the chicken to the pan, and spoon the liquid, spinach and tomatoes on top, or just pour them over the chicken when serving.
