PUMPKIN PIE PROTEIN CUPCAKE

These cupcakes are not just great during the fall, they are great ANY time of the year! They are super simple and so warm and tasty!!
Top it with a little whip or frosting and you have the perfect treat!
INGREDIENTS
1 (15 oz) can Pumpkin
1/4 cup Protein powder
2 large Egg whites
1 Large Egg
1/2 cup Low fat cottage cheese (or greek yogurt)
1 tsp Vanilla extract
1/3 cup Baking stevia OR 2/3 cup sweetener of choice that measures like sugar [1]
1/2 tsp Baking powder
1 tsp Cinnamon
1/2 tsp Pumpkin pie spice
1/4 tsp Salt
DIRECTIONS
Preheat oven to 350 degrees. pray muffin tin with non-stick cooking spray, or line with silicone, parchment, or foil liners, (spray liners if using).
Place all of the ingredients in a blender, (or food processor), and blend until mixture is smooth (if you are using Greek yogurt instead of cottage cheese, you can just stir it well in a bowl.) . Divide mixture evenly between 12 muffin tins.
Bake for 33-38 minutes, or until toothpick comes out clean. Keep in the fridge until ready to serve. Top with Tru Whip or fat free whipped cream if desired!
