SMORES MUG IN A CAKE

This s'mores mug cake has graham cracker crumbs in it, mallow bits, unsweetened cocoa and a nice pile of toasted mini marshmallows and some whipped topping to top it off.

It's only natural that I add a s'mores mug cake to my collection of recipes. It's the perfect microwavable cake. It's tender and full of flavor. The graham cracker crumbs lend the cake a lot of its flavor and the unsweetened cocoa gives it the right amount of chocolatey taste. It's basically the best kind of s'mores. One of my favorite parts of this cake is the toasted mini marshmallows on top of the cake. It makes this little cake feel like a real s'mores.

When you bite into this moist cake, you can taste the spiced graham cracker flavor. As you work away eating it, you'll run into pockets of chocolate and mallow bits. My kids couldn't get enough of this cake. Luckily I made this cake about 3 times before being completely happy with it so there was plenty to go around.


INGREDIENTS

  • 2 tbsp. whole-wheat OR protein flour

  • 2 tbsp. unsweetened cocoa powder

  • 2 tbsp truvia

  • 1/4 tsp. baking powder

  • 2 tbsp. unsweetened vanilla almond milk

  • 2 tbsp. (about 1 large) egg white or fat-free liquid egg substitute

  • 2 tbsp. fat-free plain Greek yogurt or silk non dairy yogurt

  • 1/2 tsp. vanilla extract

  • 2 tbsp. mini marshmallows

  • 2 tbsp. light whipped topping

  • 1/4 sheet (1 cracker) low-fat graham crackers, finely crushed


DIRECTIONS

Spray a large microwave-safe mug with nonstick spray. Add flour, cocoa powder, sweetener, and baking powder. Mix well.

Add almond milk, egg white/substitute, yogurt, and vanilla extract. Stir until uniform.

Fold in marshmallows.

Microwave for 2 1/2 minutes, or until set.

Immediately run a knife along the edges to help separate the cake from the mug. Firmly place a plate over the mug, and flip so that the plate is on the bottom. Gently shake mug to release cake onto the plate.

Let cool slightly, 5 - 10 minutes.

Top with whipped topping and crushed graham crackers.
